CHOCOLATE SWIRL BREAD

Chocolate Swirl Bread is an easy and soft homemade bread. Perfectly for your breakfast, dessert, or afternoon snack with a cup of coffee or tea. Once you make this bread, you will not go to the bread store anymore! 

This bread use a quick water roux or Tang zhong method. Tang zhong is a mixture of liquid and flour. It is used to replace a portion of the flour in the traditional bread recipes. Tang zhong makes the bread softer and stay fresh longer.

WHAT YOU NEED FOR MAKING THIS BREAD

Flour : Use all purpose flour or bread flour

Milk : Use fresh milk with room temperature

Dry yeast : use instant dry yeast

Sugar : Use granulated sugar or caster sugar.

Salt : Your bread is going to look and taste better with some salt added.

Butter : I use salted butter. You need soft butter for this bread.

Egg : Egg makes yeast breads finer and richer, help provide color, volume and also bind the ingredients together.

Cocoa Powder : Use a good quality of cocoa powder for this bread.

HOW TO MAKE CHOCOLATE SWIRL BREAD

Prepare the quick water roux or Tang Zhong  : In a small bowl, add 2 tablespoon all purpose flour and 4 tablespoon hot water. Mix with a spoon until well combined.

Prepare the dough : In big bowl, mix together flour, instant dry yeast, salt, sugar, milk, quick tang zhong with spatula until well combined. Then add soft butter into flour mixture and mix with your hand until well combined.

Transfer the dough on silicone mat and knead about 10 minutes until smooth.

Divide the dough become two and add cocoa powder on one dough, mix with your hand.

Add 1 tablespoon of butter on chocolate dough and mix until well combined.

Make the dough into balls and transfer into different bowls (one bowl for one dough) and cover with kitchen towel. Let it rest for 1 hour.

After one hour, open the kitchen towel. Punch the dough to remove the air bubbles.

Roll and flatten all the dough into the same size. Place the chocolate dough on the other dough and roll the dough.

Transfer the dough into the 25x12x7 cm or 9x5x3 inch prepared loaf pan, cover the loaf pan with kitchen towel and let it rest for 30 minutes.

After 30 minutes, open the kitchen towel and brush the dough with beaten egg on the top. Cut on the top of the dough with a knife (this is optional).

Bake the dough for 40-45 minutes (depends on your oven)

Ingredients
  

  • 375 grams (3 cups) All purpose flour
  • 6 gram (2 tsp) Instant dry yeast
  • 50 gram (4 tbsp) Granulated sugar
  • Pinch of salt
  • 150 ml (2/3 cup) Fresh milk room temperature
  • 1 Egg room temperature
  • 42 gram (1/8 cup) Soft butter
  • 1 tbsp Cocoa powder for chocolate dough
  • 1 tbsp Soft butter for chocolate dough
  • 2 tbsp All purpose flour for water roux / Tang zhong
  • 4 tbsp Hot water for water roux / Tang zhong

Instructions

  • Preheat your oven 180 degrees C or 350 degrees F and bake the dough for 40-45 minutes (depends on your oven)
  • After baking, take out the bread from the loaf pan and let it cool on the cooling rack.
  • After completely cool, enjoy the bread!!
