CREAM CHEESE BANANA CAKE

I believe all of you love to eat banana bread or cake, not only classic banana bread, but chocolate banana bread, blueberry banana bread etc..But have you ever tried banana cake combined with cheesecake? If you love cheesecake, you have to try this cake, this cake will rock you!!!

The creamy texture of the cream cheese mixture complements the banana cake so well and will make the depth flavor that make you crazy about this cake.

WHAT YOU NEED FOR THIS CAKE :

For Banana cake ingredients :

Banana : 2 bananas you need for this cake

Egg : to binder and hold ingredients together and giving the cake structure, give a rich flavor

Butter : I use salted butter, if you use unsalted butter, please add 1/4 tsp salt when you mix the dry ingredients.

Caster sugar : It’s very fine sugar for baking, but if you don’t have caster sugar, you can use granulated sugar.

Baking powder : It will help this cake rise in the oven

Baking soda : the acid activates the baking soda during baking, causing your quick bread to rise and cakes to be moist.

Whipping cream : I use whipping cream with 33% milk fat.

Flour : I use cake flour, you can use all purpose flour also

For the cream cheese ingredients :

Cream cheese, powdered sugar, cake flour and egg yolk

HOW TO MAKE CREAM CHEESE BANANA CAKE :

For the banana ingredients : In a medium bowl, mix butter and sugar and beat with a standing or hand mixer with low speed until well combined.

Add in the egg and beat again well combined.

Mashed the bananas with the back of the spoon and pour into the butter mixture. Beat until well combined.

Sift the flour, baking powder and baking soda into the butter mixture and beat until no more flour streaks.

Add in the whipping cream and beat again until well combined, set aside.

For the cream cheese ingredients : In another bowl, mix cream cheese with powdered sugar with spatula until well combined.

Add in the egg yolk and mix again until well combined.

Sift the flour into the cream cheese mixture and mix until well combined.

You can use loaf pan 20 x 6 cm for this cake. I use silicone baking pan for mini cake.

For Loaf pan : Pour half of the banana batter into the prepared loaf pan, then pour half of the cream cheese batter. Repeat until the cream cheese batter on the top and make a swirl with a knife.

For the silicone baking pan : Pour the banana batter into the baking pan, then pour the cream cheese and repeat until the cream cheese on the top and make a swirl with a knife. Repeat for all the mini cake.

For loaf pan : Bake for 40-45 minutes and for the silicone mini cake, bake for 20 minutes

Ingredients
  

  • 60 gram (1/4 cup) Salted butter
  • 50 gram (1/4 cup) Caster sugar
  • 1 Egg
  • 2 Bananas mashed
  • 110 grams (2/3 cup) Cake flour
  • 1/2 tsp Baking soda
  • 3/4 tsp Baking powder
  • 40 gram (3 tbsp) Whipping cream
  • 70 gram (1/2 cup) Cream cheese
  • 20 gram (1/8 cup) Powdered sugar
  • 1 Egg yolk
  • 10 gram (1 tbsp) Cake flour

Instructions
 

  • Preheat oven to 180 degrees C or 356 degrees F and line your loaf pan with baking paper. If you use silicone baking pan, grease with oil
  • For the banana batter : In a medium bowl, mix butter and sugar and beat with a standing or hand mixer with low speed until well combined.
  • Add in the egg and beat again well combined.
  • Mashed the bananas with the back of the spoon and pour into the butter mixture. Beat until well combined.
  • Sift the flour, baking powder and baking soda into the butter mixture and beat until no more flour streaks.
  • Add in the whipping cream and beat again until well combined, set aside.
  • For the cream cheese batter :
    In another bowl, mix cream cheese with powdered sugar with spatula until well combined.
  • Add in the egg yolk and mix again until well combined.
  • Sift the flour into the cream cheese mixture and mix until well combined.
  • You can use loaf pan 20 x 6 cm for this cake. I use silicone baking pan for mini cake.
  • For Loaf pan : Pour half of the banana batter into the prepared loaf pan, then pour half of the cream cheese batter. Repeat until the cream cheese batter on the top and make a swirl with a knife.
  • For the silicone baking pan : Pour the banana batter into the baking pan, then pour the cream cheese and repeat until the cream cheese on the top and make a swirl with a knife. Repeat for all the mini cake.
  • For loaf pan : Bake for 40-45 minutes and for the silicone mini cake, bake for 20 minutes
  • Let cool the cake on the cooling rack after you bake and let the cake completely cool.
    After completely cool, store the cake in the airtight container.
