DRIED CRANBERRY BREAD

Dried Cranberry Bread is a fluffy, slightly sweet bread that’s perfect for any special occasion. This simple bread recipe is mixed by hand or stand mixer and perfect for beginners, it’s super easy and delicious recipe.

I always love to eat cranberry bread, it gives a special taste in your bread, and you don’t have to add a lot of sugar because you can get the natural sweet from the cranberries.

If you are a beginners, don’t worry!! you will never fail with this recipe because it’s super easy to make but you will get a very delicious bread. You don’t have to buy a bread from bakery after you make this bread. Cranberry bread is perfect for any occasion, I usually eat for my breakfast and afternoon tea time, you can eat for dinner also.

WHAT YOU NEED FOR MAKING THIS BREAD

Butter : I use salted butter, you can use unsalted butter

Sugar : Use Caster sugar or granulated sugar

Fresh Milk : Use fresh milk with room temperature

Dry yeast : use fresh Instant dry yeast

Egg : Egg makes yeast breads finer and richer, help provide color and also bind the ingredients together.

Flour : Use All purpose flour or bread flour

Salt : your bread is going to look and taste better with some salt added.

Cranberry : I use dried cranberries, but if you want to use fresh cranberries, it can work too

HOW TO MAKE DRIED CRANBERRY BREAD

Prepare the dough : In a big bowl, mix well fresh milk and egg. Then add in flour, sugar, salt and instant dry yeast, mix well with spatula.

Then add soft butter into the flour mixture and mix well with your hand.

Add in the cranberries and mix until well combined.

Sprinkle the silicone mat with some flour to handle the sticky dough and transfer the dough on silicone mat, knead the dough until smooth about 10 minutes.

Make the dough into a ball and transfer into a bowl, cover the bowl with kitchen towel and let it rest for 1 hour.

After 1 hour, open the kitchen towel and punch the dough to remove the air bubbles.

Roll out and fold the dough and divide into 9 pieces.

Make a small ball for every dough and transfer into prepared 22 cm or 9 inch round baking pan. Cover the baking pan with kitchen towel and let it rest for 30 minutes.

After 30 minutes, open the kitchen towel and brush the dough with egg yolk + 1 tbsp milk.

Sprinkle the dough with sesame seeds on the top (this is optional), and bake for 25-30 minutes (depends on your oven).

  • 250 ml (1 cup) Warm milk room temperature
  • 1 Egg room temperature
  • 50 gram (1/4 cup) Caster sugar
  • 406 grams (3 1/4 cup) All purpose flour
  • 7 gram (2 1/4 tsp) Instant dry yeast
  • 5 gram (1 tsp) Salt
  • 60 gram (1/4 cup) Salted / unsalted butter
  • 130 gram (1 cup) Dried cranberries
  • Sesame seeds for sprinkle

Instructions

  • Add in the cranberries and mix until well combined.

  • Make the dough into a ball and transfer into a bowl, cover the bowl with kitchen towel and let it rest for 1 hour.

    Preheat oven 180 degrees C or 350 degrees F and bake for 25-30 minutes (depends on your oven).
  • After baking, take out the bread from baking pan and let it cool on the cooling rack.
  • After completely cool, enjoy the bread!!
