LEMON BLUEBERRY YOGURT CAKE

This Lemon Blueberry cake is moist and taste so delicious. It’s really perfect with tea or coffee. Enjoy every bite and the loaded of blueberries inside and outside!

Why I am so in love with blueberries? Because this fruit has a lot benefit for us. And can you imagine blueberries with a yogurt and lemon flavor inside? That’s incredible tasty. Let’s talk about the Ingredients.

WHAT YOU NEED FOR THIS CAKE :

Butter : I use salted butter. If you use unsalted butter, please add 1/4 tsp salt. It’s important for bringing all those flavors together.

Caster sugar : A super fine sugar usually for baking. You can use granulated sugar instead of caster sugar.

Eggs : An important emulsifier for ensuring a smooth batter.

Vanilla extract : it will enhances the flavor in the cake.

Lemon zest : this will give more lemon flavor than lemon juice only.

Lemon juice : Freshly squeezed is the best one. Make sure your lemon in the room temperature first.

Flour : All purpose flour is what you need for this cake.

Baking powder : It will help this delicious cake rise in the oven.

Yogurt : Yogurt is the key for a moist slice. I use Blueberry Yogurt to make the taste of Blueberries more stronger. You can use plain Greek Yogurt for this cake also.

Blueberries : Fresh or frozen blueberries can use for this cake

1 tbsp of flour : to add over blueberries, The light coating of flour around the blueberries will absorb some of the fruits liquid, making them less likely to sink.

HOW TO MAKE LEMON BLUEBERRY CAKE

For the dry Ingredients : in medium bowl, mix all purpose flour with baking powder with the whisk and set aside

For the wet Ingredients :

In another medium bowl, mix butter with the sugar and beat with the stand or hand mixer until light and fluffy. Scrape all the sides so all the butter and sugar mix incorporated.

Add the eggs, one at a time, beating until incorporated.

Add vanilla extract, lemon zest and lemon juice and beat until well combined. Alternate adding flour mixture and yogurt until everything is incorporated.

Stir the blueberries with 1 tbsp of flour. Keep about 1/4 cup of the blueberries for topping and add the rest over the batter. Don’t over mix for this one.

Pour the batter into the 25 cm (10 inches) round baking pan and sprinkle the rest of the blueberries on the top.

BAKE THE CAKE :

Bake the cake for 60-70 minutes (depends on your oven) Check using toothpick inserted in the middle of the cake, if it comes out clean means your cake already done.

Let cool the baking pan on the cooling rack and removing the cake after it’s completely cool. You can serve and enjoy the cake.

Ingredients
  

  • 220 grams (1 cup) Salted butter
  • 200 grams (1 cup) Caster sugar
  • 3 Eggs room temperature
  • 1 tsp Vanilla extract
  • 2 tbsp Lemon zest
  • 2 tbsp Lemon juice
  • 375 grams (3 cups) All Purpose flour
  • 1 1/2 tsp Baking powder
  • 245 grams (1 cup) yogurt plain or blueberry yogurt
  • 200 grams (2 cups) fresh or frozen blueberries
  • 1 tbsp all purpose flour to add over the blueberries

Instructions
 

  • Preheat the oven to 180 degrees C (350 degrees F). Give baking paper on your baking pan or using cooking spray or butter and flour it.
