NEAPOLITAN BUNDT CAKE

One cake with vanilla, strawberry and chocolate taste? Hmmm…as a cake lover, the first time I couldn’t imagine that. Made with two flavors, I already know how’s the taste, but three different flavors in one cake, make me really want to try it.

And tada…like you see on my photo, I love the combination of that three colors even actually I want the pink color was a red color. I think because I made with fresh strawberry and add 3 drops of red food coloring, made the red color wasn’t so strong, but it’s ok. I already satisfaction with the result, because it was not only look so beautiful but also taste was so delicious. It was really soft and fluffy cake. I stored in an airtight container and kept in the fridge for three days, and was surprising me because it’s still really soft and fluffy. So why have one flavor if you can have three in one cake?

With the mix colors inside and looks like a marble cake with three colors was making this cake more beautiful outside and inside. I do fall in love with this bundt cake. The texture of this bundt cake almost similar to a pound cake. Those three flavors are all made from the same batter. The strawberry cake is fragrant with fresh strawberries, the chocolate cake is deep in flavor and the vanilla cake also has a great flavor, all have a balance flavors and the sweetness.

HOW TO MAKE NEAPOLITAN BUNDT CAKE

Make strawberry puree :

Cook the strawberries and 1 tablespoon of water on medium heat. Stir it occasionally and mash the strawberries down with spatula. After the strawberry puree has thickened, pour into another bowl and let it cool.

Mix the dry ingredients :

In a medium bowl, mix the flour and baking powder with the whisk and set aside. I didn’t add salt because I use salted butter. If you use unsalted butter, you can add 1/2 teaspoon of salt and mix together with the baking power and flour.

Mix the wet ingredients :

In a large bowl, mix together the butter, oil, sugar, eggs and vanilla extract. Beat with the mixer about three minutes on medium speed until smooth, creamy and has a pale color.

Change the mixer with a low speed, alternate adding the flour and milk. Beat until the batter become smooth and silky with no lumps.

Divide the batter :

Divide the batter equally into 3 bowls. And set aside one bowl for the vanilla flavor. Add one bowl with strawberry puree and add 2-3 drops of red gel food coloring. And mix until the batter color become pink. Add the cocoa powder to another bowl and mix until the batter become brown like chocolate cake.

I was using 22 cm silicone bundt pan or you can use 9 inches bundt pan. Silicone bundt pan makes the cake easier to take out.

I add the three colors together on the bottom. And add another color on every batter. For example : add pink on vanilla, chocolate on pink etc. Repeat for every color for all the batter.

Bake the bundt cake :

Bake the bundt cake for 40-45 minutes but all are depends on your oven. Check using toothpick inserted in the middle of the cake, if it comes out clean means your cake already done.

Let cool the bundt pan on the cooling rack and removing the cake after it’s completely cool. Dust the cake with powdered sugar before you serve it.

  • 150 grams (1 1/4 cup) Fresh strawberries (frozen strawberries)
  • 1 tbsp water
  • 350 grams (2 1/2 cups) All purpose flour
  • 1 tsp Baking powder
  • 150 ml (2/3 cup) Canola oil
  • 115 grams (1/2 cup) Salted butter melted
  • 200 grams (1 cup) Granulated sugar
  • 4 Large eggs room temperature
  • 240 ml (1 cup) Fresh Milk room temperature
  • 1 tsp Vanilla extract
  • 2 tbsp Cocoa powder
  • Powdered sugar for dusting the cake
  • Fresh strawberries for decorating

Instructions
 

  • Preheat oven to 175 degrees C (350 degrees F) and if you are not using silicone bundt pan, grease and flour your 22 cm (9 inches) bundt pan.
