PINEAPPLE CAKE

I am the biggest fans of fruit cakes and for me cake with a fruits always taste more delicious than ordinary cake. Who likes fruit cakes like me? if you’re one of them, you will like this pineapple cake. This pineapple cake is really match for your coffee or tea time. I made this for my breakfast, and really made my day.

This pineapple cake was easy to make and the outcome of the cake was soft and moist because of the oil used instead of butter and had a mild flavor and aroma of pineapples, perfect cake for me.

I store this cake for over night in the fridge and the taste even more delicious and wasn’t become hard at all. I was really satisfied with the result.

WHAT YOU NEED FOR THIS CAKE :

Flour : All purpose flour what you need for this cake

Baking powder : It will help this cake rise in the oven

Salt : it is to enhance the flavor of the other ingredients. It also provides a balance to the sweetness of cake batters.

Canola oil : canola oil is the best choice for baking most cakes because it won’t affect the flavor of the cake at all.

Egg : to binder and hold ingredients together and giving the cake structure, give a rich flavor.

Sugar : both of caster sugar or granulated sugar can use for this cake.

Vanilla extract :  It also enhances the flavor of other ingredients in more complex recipes. You can use pineapple essence or extract for this cake.

Pineapple slices : You can use fresh pineapple or pineapple in a can like I use. If you use pineapple in a can, take out the pineapples and dry them and crush them using a blender without water or juice. Don’t blend too long so they will not become a puree.

Pineapple juice : You can use pineapple juice which you buy in supermarket like I use.

HOW TO MAKE PINEAPPLE CAKE :

For the dry ingredients : In a medium bowl, sift and mix together flour, baking powder and salt, set aside.

For the wet Ingredients : In another medium bowl, beat sugar and canola oil with medium speed for about 1 or 2 minutes until the sugar dissolve.

Add the eggs, one in a time and beat until well combined.

Add half of the flour mixture into the sugar mixture and beat until combined.

Then add the rest of the flour and beat until there are no more flour streaks.

Add the crushed pineapple into the sugar mixture and mix with spatula until just combined.

Then add vanilla extract and mix with spatula.

Add pineapple juice and mix together until well combined.

I use 22 cm or 8 inch silicone baking pan, grease with the oil. If you use a loaf pan, line your loaf pan with baking paper. Pour the batter into the prepared baking pan or loaf pan.

Release the bubbles with a toothpick or if you use a loaf pan, just drop your loaf pan until no bubbles on the top of the batter.

Bake the cake for 45-50 minutes.

Ingredients
  

  • 150 grams (1 cup) All purpose flour
  • 1 tsp Baking powder
  • 1/2 tsp Salt
  • 125 ml (1/2 cup) Canola oil can use vegetable oil
  • 100 gram (1/2 cup) Granulated sugar
  • 2 Eggs room temperature
  • 100 gram (1/2 cup) Pineapple slices crushed
  • 1 tsp Vanilla extract can use pineapple extract
  • 4 tbsp (1/4 cup) Pineapple juice

Instructions
 

  • Preheat oven 180 degrees C or 350 degrees F, grease with oil for silicone baking pan or line your loaf pan with baking paper.
  • In a medium bowl, sift and mix together flour, baking powder and salt, set aside.

  • Add the eggs, one in a time and beat until well combined.
  • Add half of the flour mixture into the sugar mixture and beat until combined.
  • Then add the rest of the flour and beat until there are no more flour streaks.
  • Add the crushed pineapple into the sugar mixture and mix with spatula until just combined.
  • Then add vanilla extract and mix with spatula.
  • Add pineapple juice and mix together until well combined.
  • Pour the batter into the prepared baking pan or loaf pan.
  • Release the bubbles with a toothpick or if you use a loaf pan, just drop your loaf pan until no bubbles on the top of the batter.
  • Bake the cake for 45-50 minutes. Check using toothpick inserted in the middle of the cake, if comes out clean means your cake already done. Some oven bake this cake for 35-40 minutes, so you can check the cake after 35 minutes.
  • Let cool the cake on the cooling rack and removing the cake after it's completely cool. You can serve and enjoy the cake.
