SOFT WHOLE WHEAT BREAD

We love it because it’s so soft, pillow-y, and moist, with just a slight bit of nuttiness from the whole grains. It’s really a perfect everyday loaf, perfect to make sandwich with this bread also!!

This homemade soft whole wheat bread recipe made with simple ingredients and easy to make. You don’t have to be a baker to make this bread.

WHAT YOU NEED FOR MAKING THIS BREAD

Flour : I mix the flour between whole wheat flour and all purpose flour (you can use bread flour). Read the note for more information.

Milk : Use fresh milk, room temperature

Dry yeast : Use Instant dry yeast

Sugar : Use caster sugar (you can use granulated sugar).

Salt : Bread does need salt. Your bread is going to look and taste better with some salt added.

Butter : Use salted or unsalted butter, have to be soft butter, not melting butter

HOW TO MAKE THIS BREAD :

Prepare the dough : In a medium or big bowl, add together whole wheat flour, all purpose flour, salt, sugar and instant dry yeast and mix with spatula.

Add in the milk gradually and mix with spatula until well combined.

Continue mix the dough with your hands and add in butter and mix until well combined.

Knead the dough : Knead the dough about 20 minutes, because whole wheat is tougher to knead.

Sprinkle the bowl with some flour and place the dough inside. Cover with kitchen towel or cling wrap and let it rise until doubled in size about 1 hour. This is the first proofing.

After one hour, open the kitchen towel, punch the dough down really well to remove air bubbles. Fold and roll the dough, then pinch to seal the seams.

Place the dough into the prepared 25x10x10 cm loaf pan, cover with kitchen towel and let it rise for about 30 minutes. This is the second proofing.

Bake : After 30 minutes, preheat your oven 180 degrees C or 350 degrees F and bake the bread for 30 minutes.

Ingredients
  

  • 200 grams (1 3/4 cups) Whole wheat flour
  • 125 grams (1 cup) All purpose flour or bread flour
  • 7 gram (2 tsp) Instant dry yeast
  • 1 tsp Salt
  • 1 tbsp Caster Sugar or granulated sugar
  • 270 ml (1 cup+2 tbsp) Fresh milk room temperature
  • 30 gram (2 tbsp) Butter Salted or unsalted butter

Instructions

  • Add in the milk gradually and mix with spatula until well combined.
  • Continue mix the dough with your hands and add in butter and mix until well combined.
  • Knead the dough : Knead the dough about 20 minutes, because whole wheat is tougher to knead.
  • Sprinkle the bowl with some flour and place the dough inside. Cover with kitchen towel or cling wrap and let it rise until doubled in size about 1 hour. This is the first proofing.
  • While you wait for proofing, line your 25x10x10 cm or 9x5x3 inch loaf pan with baking paper.
  • After one hour, open the kitchen towel, punch the dough down really well to remove air bubbles. Fold and roll the dough, then pinch to seal the seams.
  • Place the dough into the prepared loaf pan, cover with kitchen towel and let it rise for about 30 minutes. This is the second proofing.
  • After 30 minutes, preheat your oven 180 degrees C or 350 degrees F and bake the bread for 30 minutes.
  • After baking, take out the bread directly from the loaf pan and let it cool on the cooling rack.
  • After completely cool, cut the bread in slices, spread with butter or margarine and enjoy!!

Note :
  1. The method for making regular white bread and whole wheat bread is the same. The difference is the ingredients and whole wheat bread is more hard and dry compared to the white bread in terms of the texture. Because this time I want to make soft whole wheat bread, so I mix the flour between whole wheat flour and all purpose flour. That will make the texture more softer and less dry. You can use whole wheat flour only for this recipe, but the texture will be more hard and dry.
