STIR FRIED RICE NOODLES/KWETIAU

It’s been so long time I didn’t go to the restaurant since we have a pandemic. I miss some food which I usually eat for lunch with my friends. Some I can cook at home when I had time. And this food, stir fried rice noodles or we call that kwetiau is one of my favorite food. So this time I decided to share with you this recipe. You can use beef, fish ball and been sprout also for this food. But this time I make with everything that my whole family like.

It’s really easy to make this food. The smell and the taste were incredible, so delicious. Let’s me show you the ingredients and how to make this.

The Ingredients :

  • Fresh kwetiau or flat rice noodles
  • 2 tbsp vegetable oil
  • pokchoy
  • 4 cloves of garlic, minced
  • 1 spring onion
  • 1 breast chicken, boneless
  • 2 eggs
  • Lapchiong or Chinese sausages
  • salt
  • 4-6 tbsp soy sauce
  • 2-3 tbsp sweet soy sauce
  • powdered chicken broth

And this is the simple way to make this food :

  1. Heat the oil in a frying pan on high heat
  2. Fried the chicken until golden brown
  3. Add Lapchiong or Chinese sausages and stir fry until the lapchiong have a little bit dark colour
  4. Move the chicken and lapchiong in one side and add garlic. Stir fry the garlic with medium heat until the fragrance comes out.
  5. Add the eggs and pinch of salt, scramble the eggs and break off any lump.
  6. Add pokchoy, spring onion, and salt, then saute and mix well
  7. Add 4 tbsp soy sauce and mix well. Add fresh kwetiau and mix well
  8. Then add sweet soy sauce and powdered chicken broth, and mix well until the kwetiau color become little bit brown. Adjust the taste according to your taste.
  9. Sprinkle with spring onion before you eat.
